Market is used to supply smaller outposts/villages, or to bring supplies back. the two most likely options are fishing and mining outposts that are further away from your main settlement. It starts with two sleds, but the workers can be assigned carts after you build them.

Once you assign a worker to the market, you can create a route. You select one warehouse you want to take resources from, and one warehouse you want them taken to. If the warehouses don’t have a matching set of storage bins, then those items wont appear on the list of possible items to grab.

The villager will then keep running back and forth but will only take supplies one way. Last I heard the villager doesn’t have to be able to find everything that’s on the cart list, but I am unsure of when they decide they have enough.

So for example

You are ready to open a second mine that is far away from home. That means at minimum you will need a cave entrance, warehouse, cottage, and either a healer/cook for warmth. The cave workers will need torches and picks. Cooks need raw food, and maybe a knife. If you setup a watchtower then the archer needs bows and arrows. Instead of building a wood cutter for firewood, gathers hut for food, and a workshop to supply tools, you can simply setup a market route to bring them from your main town.

So you setup a market either by the cave or near the main town. You assign two villagers two it. One gets a route of bring all of the ore and stone back from the mine. The second route is to take the tools, firewood, and food to the settlement that it needs to survive.
